The generally accepted recommendation is Ebisu, which is in the inner
Sunset, around 7th and Irving if memory serves me correctly. The wait
will be atrocious, though.

My personal favorite is Hamano, at 24th and Castro. Their katsuo is
to die for. Again, it's often mobbed, although it hasn't gotten the
same press that Ebisu has, so it's not quite as bad.

If you'd prefer moderately good without long waits, Take Sushi is on
Noe just south of 14th. They've been known to do some funky things,
such as a hamachi and mango roll that's actually quite good. Most of
the menu is tacked up on the wall rather than printed on the regular
menu.
